Lunch Inspiration #2

Here is a warm, hearty lunch I made with a mix of leftover chili on top of brown rice, leftover roasted taco cauliflower, and some freshly sauteed sweet potatoes and beets.

For the sweet potatoes, steam some sweet potatoes and beets (or use pre-cooked beets like I do).

Meanwhile, sautee some chopped onions and garlic until translucent. I use water to sautee instead of oil.

Then toss in some greens and the sweet potatoes and beets. I seasoned with cumin and fresh grated ginger.
