Delicious vegan/plant-based curry... from a box!

A couple days ago we got home from a very long time on the road and I needed some quick and easy that I could do with limited ingredients. Our fridge was almost bare since we had just gotten home and had no time for grocery shopping. Luckily, I had a handful of ingredients that came together just right.

Jesse and I spent the holidays driving all around to see our family. First we spent the night in Atlanta, GA with my brother and sister-in-law, then made it down to Orlando to visit my mom for Christmas, further south to meet my dad in Delray Beach, and then back up to southwest Virginia for New Years with my husband's family out there. It was great.

Here is my mom and I digging up sweet potatoes in her oh-so-enviable organic garden.

As for this amazing curry, I stumbled upon this product at Costco and I love it for situations like this.

This is a gluten-free, vegan, plant-based simmer sauce that tastes great and there are no culinary skills necessary. I was really surprised to find this at Costco.

The Recipe

To prepare, I simply threw some onions, garlic, and tempeh in a large pan:

Once the onions were translucent and tempeh was slightly golden, I threw in broccoli:

Followed by the simmer sauce and greens:
