This is one of my favorite recipes of all time, which I got from the Forks Over Knives website. I make a big batch of the dry ingredients and keep it in my pantry so that whenever I want one, all I have to do is add water and pour it on a pan.

As soon as I pour the batter on the pan, I add the toppings. My favorite combo is chopped mushrooms and chives, and Daiya mozzarella style cheeze (this is the only vegan cheese that I've tried that actually tastes good). When the omelete is done and on my plate, I top it with sliced avocado, Sriracha, and hemp seeds. So much yum!
