Miso Noodle Soup and Kale Salad

Soup

In a small pot, mix water, miso and soy sauce to taste and bring to a boil. Add rice noodles (I used pho noodles, which can be found with Asian or Vietnamese food). Once the noodles are tender, add chopped green onions. Sprinkle with sesame seeds (they're good for you!).

Salad

Toss kale and shredded cabbage in dressing of your choice, then top with any of the following: dried cranberries, pumpkin seeds, sesame seeds, hemp seeds, raisins, or whatever else you like on salad.
